prep on a clean slate We slice and dice it all—even meat—on renewable-bamboo cutting boards from our favorite eco home store, 3R Living, and wash up with nondrying, plant-based EO hand soap.

preorder a quality bird Most supermarket turkeys are raised indoors and fed unnatural supplements to plump them up. Free-range "heritage" varieties-breeds that have been rescued from near-extinction-roam outside and eat the varied diet they're supposed to. Find a local seller through EATWELLGUIDE.ORG, and then learn how to find the best artisanal turkeys online with domino's alternative bird guide.

set a green table Willow Glassware goblets, from recycled Napa Valley wine bottles, available through 3R Living, add a festive fall touch. For candles, stick with petroleum-free beeswax with non-lead wicks from Greenfeet.com.

compost the scraps As good as the meal was—and this turkey is off the hook—extra bits are inevitable. Those leftovers (minus the meat and bones) go straight into a nonsmelly countertop compost pail from 3R Living.
