Pineapple Pepper Sauce

For a fully tropical effect, serve this sauce over coconut ice cream.

The Ingredients:

Makes about 1 cup (serves 8 as a topping)
  • ½ pineapple, cut into small pieces (about 2 cups)
  • ½ cup sugar
  • 1 tsp. coarsely ground black pepper

Place all ingredients in a pan over high heat. When mixture comes to a boil, reduce to a simmer and cook for 30 minutes. Serve warm over coconut ice cream.
