The luscious tomatoes of late summer take center stage in this simple salad.

Serves 10

The Ingredients:


  • 3 cloves garlic
  • ¼ cup olive oil
  • 4 pints cherry tomatoes, halved
  • ⅓ cup packed fresh basil leaves, coarsely chopped
  • Sea salt and freshly ground black pepper

Cut garlic cloves in half lengthwise, and rub cut sides on the inside of a large serving bowl. Add olive oil to the bowl. Add tomatoes and basil; toss. Season with sea salt and pepper to taste. Cover and let sit at room temperature for an hour before serving. Toss again just before serving.
