nori lettuce wraps

This light and nourshing lunch helps you to gain energy instead of the desire to nap. Layer a nori sheet (dried not roasted) over a leaf of romaine, fill with a heap of raw veggies and roll up.

For The Wrap:


Makes 2 servings

  • 2 large romaine-lettuce leaves
  • 2 sheets nori seaweed

For The Filling:


  • 1/3 cup bean sprouts
  • ¼ avocado, sliced
  • ¼ cup raw corn kernels
  • ¼ bell pepper, cut into julienne strips
  • 1 small clove garlic, finely minced
  • few slices red onion
  • sushi-pickled ginger
  • 1 tbsp. nama shoyu (raw soy sauce)
  • 1 tbsp. raw apple-cider vinegar
  • 1 tsp. finely minced jalapeno pepper
  • sesame dip (see recipe, here)

Arrange romaine leaves on a flat surface and top each with a sheet of nori. Divide filling ingredients among nori sheets. Drizzle each with sesame dip. Roll up to form wraps or serve open-faced.

BTW: Nori not only is a rich source of calcium, zinc and iron, but contains lignans, which may help fight cancer.
