Arugula, Feta, Beet and Mint Salad

The heat of the arugula, the sweetness of the beets and the saltiness of the feta create a perfect mix.

The Ingredients:


  • 6 handfuls of arugula
  • 4 medium beets
  • 4 oz. feta cheese, crumbled.
  • mint to taste

Boil beets for about 30 minutes. Let cool, then peel off the skins with your fingers; cut beets into bite-size cubes. Combine with arugula and crumbled feta. Throw in a handful of fresh mint, torn into small pieces.

Make a simple dressing of olive oil, lemon juice, and salt and pepper and drizzle over the bed of greens. Add some lemon zest for an extra kick.
