The Ingredients:
- 6 handfuls of arugula
- 4 medium beets
- 4 oz. feta cheese, crumbled.
- mint to taste
Boil beets for about 30 minutes. Let cool, then peel off the skins with your fingers; cut beets into bite-size cubes. Combine with arugula and crumbled feta. Throw in a handful of fresh mint, torn into small pieces.
Make a simple dressing of olive oil, lemon juice, and salt and pepper and drizzle over the bed of greens. Add some lemon zest for an extra kick.
